When cooking pork chops on the skillet, take a cast iron pan and heat to medium high or high. First sear the chops till brown on both sides for a few more minutes. This will take about two minutes on each side. Turn off the heat, cover the skillet and let the meat cook for a few more minutes. The meat continues to cook even when the heat is off. Lift the lid after a few minutes and check for doneness. Do not crowd the pan and make sure there is space between the pork chops. Arrange the chops so that the thickest part of the chops is towards the centre.

If cooking in the oven, preheat the oven to 350°F for 45 minutes. Spread a dry rub on the pork chops first. Season the pork chops well before adding it in the oven. Add in the oven and bake till done. Bake sure the meat is not pink in the middle. The pork chops turn white when fully cooked and is a good indication of doneness. To make the dry rub, mix freshly ground cumin seed, black pepper, coriander seeds, sugar and salt. A simpler mix made with a little paprika, salt and pepper can also be used instead.

To grill pork chops, select a good cut, of medium thickness. Soaking pork chops in salt water first helps make it tender, and moist. Preheat the grill first. Grill the pork chops for three minutes on each side till done. Measure with a digital meat thermometer. The temperature in the thickest part of the meat should read above 145°F.

Slow cooking pork chops gives the best results. In the slow cooker, pork chops take two and a half to three hours to cook. Add onions, potatoes, and a little cheese or mushroom soup to the slow cooker so that it cooks with the pork chops. Serve pork chops with apple sauce, and vegetables like sautéed spinach, potatoes, or beans. Other sauces like mushroom and onion gravy or sour cream also work well with pork chops.
